Pan Pizza also known in Italy as Pizza in Teglia is a traditionally made Italian leavened dough that is rolled out, seasoned and cooked in large round or rectangular metal trays. Once cooked it put on display for sale.
Since the pizza in the pan must be kept on display and possibly re-heated, it requires the dough to be very watery. For this purpose, strong flours and appropriate regeneration procedures are used, allowing for a greater percentage of water to be added to the dough.
Pan Pizza Class with Marco Graziani – Graziani homemade is a unique cooking experience which you can use and impress your friends in the future.
The class will last approximately 3 hours, instructed by Marco Graziani – Italian pizza chef certified by the Associazione Verace Pizza Napoletana (AVPN) and will take place in the comfort of your own home.
WHAT YOU WILL LEARN IN THIS CLASS
Marco will prepare the dough the day before so as to have the perfect time required for excellent fermentation. This dough will be used during your course in the exercise of stretching, cooking and tasting. the pizza dough freshly made in your home on the day will be yours to use the following day.
